Stop whatever you’re doing. This avocado cheesecake will make you healthy without sacrificing any yumminess!
Avocado Cheesecake
Ingredients:
- Ground crackers – 3 cups
- Unsalted butter (melted) – 180 g.
- Whipping cream – 350 ml.
- Sugar – 1 cup
- Gelatin (soaked) 1+1/2 tablespoon
- 2 New Zealand Avocado!
- Whipping cream – ¼ cup
- Cream cheese – 300 g.
- Lime juice – 3 limes
- Lime zest – 1 tablespoon
Method:
- Mix ground crackers with melted butter and add to mold. Press
the crust till firm. Let chill in refrigerator for 15 minutes.
- On low heat, mix whipping cream and sugar. When the ingredients are mixed add gelatin and mix well. Let chill in room temperature.
- Mix cream cheese and avocado, add the cream mixture then mix well. Pour in the prepared mold with crust. Leave in the refrigerator for another 30 minutes.
- Garnish with lime zest or lime slices before serving.
