Stop whatever you’re doing. This avocado cheesecake will make you healthy without sacrificing any yumminess!

Avocado Cheesecake

Ingredients:

  • Ground crackers – 3 cups
  • Unsalted butter (melted) – 180 g.
  • Whipping cream – 350 ml.
  • Sugar – 1 cup
  • Gelatin (soaked) 1+1/2 tablespoon
  • 2 New Zealand Avocado!
  • Whipping cream – ¼ cup
  • Cream cheese – 300 g.
  • Lime juice – 3 limes
  • Lime zest – 1 tablespoon

Method:

  • Mix ground crackers with melted butter and add to mold. Press
    the crust till firm. Let chill in refrigerator for 15 minutes.
  • On low heat, mix whipping cream and sugar. When the ingredients are mixed add gelatin and mix well. Let chill in room temperature.
  • Mix cream cheese and avocado, add the cream mixture then mix well. Pour in the prepared mold with crust. Leave in the refrigerator for another 30 minutes.
  • Garnish with lime zest or lime slices before serving.
